Date & Coconut Rolls

A simple treat that is absolutely delicious! We always have our house stocked with these treats as they are a family favourite.  Dates are naturally very sweet and are high in fiber. They contain copper, magnesium, manganese and potassium which are all very important for cardiovascular health, proper muscle function and wound healing.  They also contain B’s, C, D, A & K vitamins.  Coconut is amazing, I talk about it all the time, they have many health benefits and they are a great thing to be added to any treat.  Both of these items can be found at your local grocer and of course should be organic.

Our son loves to snack on these rolls and it is safe for them to try once they have enough teeth to chew and have introduced them individually between 9-12 months of age.  If you are worried about choking you can put them in your nuby or  slice the roll into small pieces. They melt in your mouth which is also a great benefit for little ones.

Ingredients:

  • 4 dates: Medjool, Bard Valley or any other organic option you find
  • 1/2 cup Organic coconut flakes

Instructions:

Finely chop the dates until made into a paste.  Be sure to remove the pit.  Once finely chopped roll into one long roll and chop into equal parts.  Once you have made your rolls, roll them with the coconut flakes and you are done.  Easy!

Makes 4 rolls
