Kale Pesto

It is becoming apparent to me and hopefully  to all you health savvy people as well that I like to sneak extra greens in wherever possible to ensure that my family gets enough on a daily basis.  Food is medicinal when we eat the right foods.  This way it is as if I get my daily requirements of essential nutrients from the foods I eat as opposed to supplementing them; what an interesting concept ;) .

This is a detox friendly meal so you can use it as a pasta or pizza sauce and also as a dip for your veggies.

Keep in mind that the garlic is fresh so do not go crazy on it and add more (like I did) and then your family doesn’t want to hang out with you as a result… ;) It can be very overpowering, which is great for the cold that I am fighting currently, but it can be a bit much otherwise!

Health tip: Garlic is one of my very favourite antimicrobial agents so this is a great meal to have during the cold and flu season.  Keep in mind that garlic must be freshly chopped to activate the key constituent allicin, which is responsible for its antimicrobial properties.  Garlic can also be effective in lowering blood pressure and cholesterol levels.

Kale Pesto

½ bunch kale
2 tbsp olive oil
½ cup hemp seeds or pine nuts
1 tbsp dry basil (or 3 tbsp fresh)
1 tsp dry oregano (or 1 tbsp fresh)
¼ cup fresh lemon juice
1-2 cloves garlic
½ tsp sea salt
 
Place all ingredients in a food processor and mix. 
 
 

* This is kale pesto with brown rice pasta, delicious!

  1. SO YUMMY! A must try! I didn’t have pine nuts or hemp seeds so I substituted with almonds and came out VERY good!
